Lentil soup

I’ve tried hard to recreate the lentil soup that takes me back to the all night soup kitchens from my many holidays in Turkey. This is the nearest I can get without shelling out a few hundred quid for a fortnight in the sun!

2 medium onions, 250g carrots, 110g red lentils, 3 pints veg or chicken stock.

Place all ingredients into saucepan, cover, bring to the boil and simmer for 25-30 mins till veg/lentils are cooked through. Cool for apx 5-10mins then purée in a liquidiser or with a hand blender.

If you like heat, you can add dried chilli flakes.

I like mine served with a squeeze of fresh lemon and some nice flatbread.
